Roasted Carrot and Ginger Turmeric Soup
Oh Blendtec how I have missed thee! In California I used my Blendtec everyday. In the morning for my preworkout herbal latte, post workout for my green smoothie, soups often, salsa always, almond butter about once a week, (almond butter was a staple!) hummus, sauces, etc. It was very well used! But we had to break up in order to move to Europe. It wouldn't have worked out, with it's 120 voltages and all. So it was included in our Estate Sale and someone got a steal of a deal, and I left with a wounded heart.
Little did I know how expensive these babies would be in Europe. Ouch! Most electronics are more expensive here than in the US, and high performance blenders are no exception, but double the price is just straight up painful! So after 5 months, I readjusted my expectations and took the plunge on Amazon, waited for my husband to have a heart attack when he got the Mint.com notification, and then proceeded to count the hours until my (expedited) shipment came. Because 5 months without my right hand was long enough.
So at last, it is here! I didn't even realize how much I had missed it, but everything is right again. I have been blending away, and being that's it's still the dead of winter in Brno (even though it's almost Easter) the first thing I made was this delicious soup. Because I love soup! And the bread here is fantastic, and freshly baked, warm crispy baguettes with soup is the perfect simple, low cost and super healthy meal for a weeknight. This was a go-to meal when we were in Paris sampling baguettes from one end of the city to the other. What better way to eat a baguette than dipped in a hot delicious bisque.
Roasted Carrot and Ginger Turmeric Soup
5 Medium Sized Carrots
I Medium Onion
3 Cloves of Garlic
Toss with Olive Oil and Sea Salt and Roast at 375 for 20 minutes
2cm cube of ginger, peeled
Add and Blend:
2cm cube of ginger, peeled
2 Cups Hot Water
1 Tbsp Coconut Oil
2 Cups Coconut Milk
Salt and other seasonings to preference (I like to add dry Italian seasonsings)
1 Tbsp Turmeric
Fresh Parsley
Top with Avocado, Sriracha, more Parsley
Serve with a freshly toasted baguette , really! Do it!
